500g of durum wheat flour
200ml of water
Salt to taste
Extra virgin olive oil

500g of ripe tomatoes
1 onion
2 cloves of garlic
Fresh basil
Salt and pepper to taste
Extra virgin olive oil
PicchiPacchi Preparation:
1. In a bowl, mix durum wheat flour with water and a pinch of salt until you get a homogeneous dough.
2. Knead the dough on a floured surface until smooth and elastic.
3. Cover the dough with a cloth and let it rest for about 30 minutes.
4. Divide the dough into small balls and roll them out with a rolling pin to obtain thin sheets.
